This was my kitchen this evening. Note the lack of outlet covers due to an ongoing renovation:
It’s going to be a doozy of a week so I am prepping as much as possible this evening to set us up for success. Lunches are made, I’ve planned dinner for most of the week, and Easter is packed away for another year. I even made the kids’ favorite muffins for a quick and easy breakfast. It’s a simple, healthy, and tasty recipe so I thought I’d share.
Pumpkin Spice Muffins
(Makes 15 muffins)
What You Need:
1 box of Spice Cake mix (any brand)
1 16oz. can of pumpkin puree (not pumpkin pie puree, just the pumpkin)
That’s it! I like to add a tablespoon of chia seeds and flax seeds too since my kids still gobble them up. Bake the muffins at 350 degrees for 14-15 minutes or until a toothpick comes out clean. Also, I use a scoop for the batter because I am a weirdo and I like my muffins uniform and pretty. It’s one of my favorite kitchen tools.
